Ingredients

3tbsp vegetable oil
1/2 red onion, thinly sliced
3tbsp Patak’s Korma Paste
1tbsp tomato paste
2/3 cup canned tomatoes
2/3 cup water
400ml coconut milk
1 1/4tsp salt
1 tomato, cut into chunks
600g barramundi, cut into large dice
1/4 cup coriander leaves

Method

  1. In a large pot over medium heat, add the vegetable oil and cook off the red onion for 3 minutes until translucent.
  2. Add Patak’s Korma paste and cook for 1 minute to release the aroma, turn heat up to medium high then add tomato paste and tomato pulp, cook for 2 minutes.
  3. Add water, coconut milk, salt and stir, then bring to simmer, turn the heat to low so that it’s bubbling gently. Then add the fresh tomato.
  4. Simmer for another 3 minutes, stirring every now and then.
  5. Add the barramundi, stir and cook for 3 to 4 minutes until the fish easily flakes.
  6. Remove from stove and transfer to serving bowl. Garnish with coriander.
