500g Lamb mince
1 Red onion, diced
3tbs Patak’s Rogan Josh Paste
½ cup yoghurt
2 tomatoes diced
3 baby cucumbers sliced thinly
1 small red onion, sliced thinly
½ bunch coriander, leaves picked
1tsp coriander powder
1tbs white vinegar
2tbs olive oil
In a large frypan brown of the lamb mince and fry off the onion, remove from the pan.
In a couple of tbs of olive oil fry off the Rogan Josh paste. When fried add the mince and onion back into the pan. Add in the yoghurt and ½ a cup water. Cook the mince at a gentle simmer until tender.
Add in the tomato and a pinch of sea salt, cook for a couple more minutes until the tomato softens.
In a bowl mix together the salad ingredients.
Serve the Rogan Josh on steamed rice with the salad on top to garnish.
