Beet & Cucumber Raita

Ingredients

1 tsp cumin seeds
½ beetroot, peeled and grated
½ cucumber, grated
Salt, to taste
2 tbsp fresh mint leaves
200g thick Greek yoghurt
Zest and juice of ½ orange

Method

  1. Gently heat a small frying pan and add the cumin seeds. Allow to toast for a few minutes, until fragrant. Remove from the heat and allow to cool.
  2. Mix the beet and cucumber together and add a good pinch of salt. Scrunch together, squeeze out the juice and discard.
  3. Stir in the mint, yoghurt, orange zest and juice. Taste and add more salt if you like.
  4. Grind the toasted cumin seeds and stir through the raita before serving.
