1 mango, diced
1 small red onion, diced
1 cucumber, diced
1 red chilli, diced
1/2 bunch coriander, chopped

Method

  1. In a bowl, mix together the Greek yoghurt, Patak’s Tandoori Paste Marinade, a drizzle of oil, and a pinch of sea salt. Add the prawns and coat them evenly. Skewer the prawns onto soaked wooden skewers.
  2. Heat a BBQ or griddle pan until smoking. Cook the prawns until charred and just cooked through on both sides.
  3. While the prawns are cooking, combine all the salsa ingredients in a separate bowl. Taste and season with salt to your liking, then drizzle with olive oil.
  4. Serve the prawns topped with the mango salsa and a simple side salad.
