Lemon and Coriander Oven Bake Skewers

These tasty skewers are ideal for a quick mid-meal or summer BBQ with your family.

Ingredients

Serves 4
  • Prawn Skewers

    • 90g Diced courgette
    • 90g Diced red pepper
    • 200g Raw King Prawns
    • 4 Bamboo skewers
    • 1 sachet Lemon and Coriander Oven Bake

    Chicken Skewers

    • 80g Sweet Potato
    • 80g Red Onion
    • 300g Boneless skinless Chicken Thigh
    • 4 Bamboo skewers
    • 1 sachet Lemon and Coriander Oven Bake

Method

Pre-soak all the bamboo skewers in water, as this will prevent the bamboo from getting burnt while cooking.

 

For the Prawn skewers:

  1. Mix all the ingredients in a mixing bowl, along with a packet of Lemon & Coriander Oven Bake marinade.
  2. Leave the ingredients to marinate for at least 20 minutes.
  3. Arrange the ingredients neatly on the skewers- you should be able to make around 8 skewers with your mixture in the bowl.
  4. Cook the prawn skewers for 5 minutes, at 200c in a pre-heated oven.

For the Chicken Skewers

  1. Mix all the ingredients in a mixing bowl, along with a packet of Lemon & Coriander Oven Bake marinade.
  2. Leave to marinate for at least 20 minutes.
  3. Arrange the marinated ingredients on the bamboo skewers- you should be able to make around 4 skewers with your mixture in the bowl.
  4. In a pre-heated oven at 200C, cook the skewers for 10-12 minutes.
  5. Check that the chicken is cooked through before eating.
  6. Garnish with chop coriander

Serve with half a lemon and mango chutney.
